Ingredients

    2 lbs boneless, skinless chicken breasts
    1 (14 oz) can artichoke hearts, packed in brine (not oil), drained
    1 (12 oz) can condensed cream of mushroom soup (I'd personally use the reduced fat variety)

Directions

Cut the chicken breasts into 2 inch pieces and put them into the slow cooker. Cut the artichoke hearts in half and add them to the chicken. Add the cream of mushroom soup. Cook for 2 hours on high or 4 to 5 hours on low. Stir and serve.

    Pretty good. I don't know if I'd call it a casserole, but it was very good.

    ETA: Yeah, mine was soupy too. I think I'll try with the tomatoes and mushrooms! Thanks!

    I agree, it's really not thick enough to be called a casserole. Mine turns out kind of soupy, so we eat it over brown rice, or whole wheat pasta. The last time I made it, I added a can of drained tomatoes, mushrooms, and some garlic and onion powder. We liked it even better with those additions.
