Introduction

Ingredients

4 ounces diced tomatoes (you can use green chiles)
4 ounces softed neufchatel cheese
1/2 tsp ground cumin
2 C turkey
8 whole wheat flour tortillas
16 ounces salsa
1 can Chili beans, undrained
1/2 C shredded Monterey Jack Cheese
Directions
1.Pre-heat oven to 350 degrees and lightly grease a 9x13 in baking dish.
2. In a medium bowl, mix chili chili peppers, cream cheese and cumin. Stir in chopped turkey.
3. Place totillas in microwave oven. Heat for 1 min. or until the tortillas are softened. Spread about 2 heaping tablespoons of the mixture on each tortilla and roll them up. Place seam side down in the dish. Single layer.
4. Ina med bowl, combine the salas and beans. Spoon the mixture over the enchiladas. Sprinkle with cheese.
5. Bake 20 min or until bubbly and lightly browned.
serving is 1 toritila each. Great with Rice on the side.
