Ingredients

    2 thin-style pizza crusts
    1 can pizza sauce
    1 package goat cheese (about 100g)
    6 slices bacon (thick-sliced)
    2 red peppers
    1 large tomato
    1 shallot (can sub one small onion if desired)
    1 tbsp olive oil

Directions

Preheat the oven to 375F. Slice the red peppers into quarters, toss them in the olive oil, and put them in a roasting pan in the oven for approximately 45 minutes at 375F.

While the peppers are roasting, prepare the rest of the toppings - chop the tomato, slice the shallot, and fry the bacon. Once the bacon is done, chop it into small pieces.

When the peppers are tender and slightly blackened on their skins, remove from the oven and let cool. Once cool, peel the outer skin off the peppers and discard, and slice the peppers into small pieces. (The skins should just peel right off but if they don't, you can trim the remaining bits or just leave it on there if you don't mind it.)

Once all the toppings are prepared, add the sauce to the pizza crust, and top as desired - the toppings work out to 1/2 can sauce, 1/2 shallot, 1/2 tomato, 1 red pepper, 1/2 pkg goat cheese, and 3 pieces bacon for each pizza. Tear the goat cheese into small pea-size pieces.

Bake for about 12 minutes directly on oven rack, or until cheese is slightly browned. Makes 8 servings (or more if you like smaller pieces of pizza).
