Ingredients

2 C. dried kidney beans
1 large onion, chopped
6 large cloves garlic, mashed
2 quarts boiling water
2 C. TVP granules
3 Tbsp. chili powder
1 Tbsp. cumin
1 C. brown rice
2 C. water
1 tsp. salt
Directions
Overnight, in 6 cups of water, soak 2 cups dried kidney beans. Drain and rinse well. (Can use canned beans, skip the soaking.)
Cook in kettle with:
Onion, garlic, and 2 quarts (8 cups) boiling water for 45 minutes. Then add:
TVP granules, chili powder, and cumin. Continue cooking until tender, 20-40 minutes. Most of the liquid should have cooked into the beans and TVP. Taste and add salt, if necessary.
Meanwhile, cook brown rice according to package directions.
Mix the cooked rice and beans, taste, add a pinch of cayenne pepper or hot sauce if desired.
Serves 8.
