Ingredients

Egg, fresh, 2 extra large (remove)
Milk, 1%, 1 cup (remove)
Flour, white, .5 cup (remove)
Whole Wheat Flour, 0.5 cup (remove)
Directions
Heat oven to 450 degrees. Spray muffin pan with cooking oil and put in oven to heat while oven is preheating. Mix batter during this time.
Using a fork, beat two eggs slightly. Add milk to eggs, stir. Gradually add flours, stirring with fork only to mix--batter will be slightly lumpy.
Take muffin tin out of oven and pour batter, filling cup 3/4 of the way. Bake at 425 for 20 minutes; reduce heat to 325 and continue baking for 15 minutes. Remove from oven and pierce each popover with a fork to release steam. Remove from pan. *Makes 6 large popovers, but this recipe is easily halved... or, use a mini-muffin pan for small popovers.
Enjoy with Promise margarine, organic, low sugar apricot preserves, and a cup of hot green tea! ...yum!
