Needed a way to make and serve breakfast that everyone including my picky husband would eat.

Number of Servings: 18

Ingredients

    4 c. quick cooking oats
    3/4 c. brown sugar
    1-1/4 c. milk
    3 tbsp butter
    2-1/8 tea. baking powder
    3/4 tea. salt
    2 tea. vanilla extract
    2 tea. cinnamon
    1 can pumpkin
    1/4 c. brown sugar (for top)

Directions

Set oven to 350 or 325 for glass pan.
Grease 9X13 pan
In large bowl, mix all ingredients except 1/4 c. brown sugar. and spread into pan.
Sprinkle 1/4 c. brown sugar on top.
Bake for 20-25 minutes.

    I was looking for an easy go to recipe with ingredients that I usually have on hand for busy mornings when my family is on the run. My 6yr. old loved them but then again oatmeal and pumpkin pie are two of her favorite things to eat. Will try to mix in nuts and dried fruits next time. YUM! - 8/17/12
