Ingredients

    1 package meatless ground
    1 small sweet onion, shredded
    1 cup shredded carrot
    1 cup shredded zucchini, juice squeezed out
    2 large eggs
    2 slices wholewheat toast, crumbled
    dash of salt and pepper
    any other spices you may want to add
    2-3 tbsp ketchup
    1 tbsp mustard

Directions

So easy! Preheat oven to 400 degrees. Mix all ingrediants together in a bowl (except the ketchup and mustard). Divide mixture into 8 muffin cups. Mix ketchup and mustard in a small dish. Spoon mixture over top of meatloaf as a glaze. Pop tray into the oven for 20-25 min.

Makes 8 muffin cup-sized meatloaves. They can even be frozen for later!
