Ingredients

15 blackberries, fresh if possible
1/8 C coconut milk
1/4 t ginger
8 oz fillet of salmon
Directions
Preheat oven to 350
Set aside 3 blackberries
Rinse the salmon and pat dry
Add remaining 12 blackberries, coconut milk and ginger to a bowl and smash the berries up with a spoon. The berries should separate into individual pieces.
Coat a glass baking dish with coconut oil (or other suitable baking grease)
Place the salmon in the pan, then flip it over so the entire fillet is lightly coated in oil.
Pour the blackberry mixture over the salmon
Cover the pan with foil
Bake for 10 minutes until the fish is cooked through and separates easily
Serve warm with the sauce and top with the remaining 3 blackberries.
