This recipe was my friend's idea, I can't take all of the credit for this one. It's simple, fast, and so impressive!

Number of Servings: 4

Ingredients

    1 large yam (cubed)
    10 medium size mushrooms (sliced)
    1-2 green onions (chopped)
    2 tablespoons butter
    1/2 cup feta cheese (crumbled)
    Salt and pepper to taste
    Garlic powder

Directions

Preheat oven to 400 degrees

1. Peel and cube one large yam (about 1 inch cubes)
Toss yams with olive oil, salt, pepper and garlic powder and put in the oven for 20-30 minutes (until they are fork tender and have some golden brown).

2. Slice mushrooms and green onions and set aside until the yams are almost done (5 minutes remaining).

3. Heat 2 tablespoons of butter (not margerine) in a pan on medium-high heat. When butter is bubbling, add mushrooms. Let them brown, flip them and let the other side brown. When cooked, add a little bit of salt to taste.

***The key to cooking mushrooms is to not over-crowd the pan, do not stir them around a lot, and do not add salt until they are done.

4. Take yams out of the oven and toss in the mushrooms, green onion and crumbled feta, add more salt and pepper if you desire, and enjoy!

    I make something similar: use oven bag and cook the veggies in avocado oil for similar amt of time; remove from bag and add cheese. Less clean up and healthier than butter. - 1/3/17
