A wonderful hearty soup for cold winter nights! A wonderful hearty soup for cold winter nights!
Number of Servings: 8


    6 cups diced potato
    1 cup diced carrot
    1 cup diced onion
    1 T oil
    3 T cornstarch
    8 cups chicken stock
    1 cup fat free half and half
    1 1/2 cups milk
    salt & pepper to taste

    Garnish with

    Shredded cheddar
    crumbled bacon
    Green onion


Cook onion, carrot, and 3 cloves of smashed, chopped garlic in oil until softened. Add potatoes and chicken stock. Cook until potatoes are soft. Add cornstarch to thicken and half and half and milk. Cook to warm milk/half and half. Salt and pepper to taste. Garnish with a small amount (1 crumbled slice) of bacon, shredded cheddar, and green onions. Enjoy!!

Ingredients do not take into account garnishes--adjust accordingly!
