Introduction
This is one of my favorite breakfast foods. It includes fruit, ricotta cheese and bread but makes it into a delightful breakfast. Served with sugar free hot cocoa and your meal is complete! Ingredients

2 slices of Mrs. Baird's whole grain white bread
1/2 cup ricotta cheese
1/4 - 1/2 tsp vanilla extract
2 - 3 pkts. Splenda with Fiber
1 cup fresh or frozen and thawed blackberries
1 tbsp Smuckers raspberry preserves
Directions
1. Toast 1 side of bread under broiler. Remove and flip
bread on baking sheet where toasted side of bread is
facing the baking sheet and untoasted side is up.
2. In a small bowl, combine ricotta cheese, vanilla extract
and Splenda packets. Stir well to combine.
3. Spread half of ricotta mixture on the untoasted side of
the bread.
4. Place the danish under the broiler for about 3 -5
minutes or until heated through.
5. In the meantime, place the preserves in the microwave
oven and heat for about 30 seconds or until the
preserves are melted.
6. Stir the blackberries into the melted preserves, tossing
to coat all fruit with the preserves.
7. Remove the danish from the broiler and place with a
spoon the blackberries on top of the ricotta mixture. drip
any leftover preserves on top of the black berries. Serve.
1 danish is equal to one serving.
