Introduction
Misread an on-line recipe and then changed it up a bit so I could use a can of cranberry sauce I bought for Thanksgiving and didn't use. They are pretty yummy but somewhat sticky given that there's no oil in them, I think. I think next time I'll add a bit of flax or hemp seed to them as well to up the nutritional profile. Ingredients

1 cup flour
1/2 cup whole wheat flour
1/2 cup white sugar
3/4 cup brown sugar (or a mix of demera and golden sugar, whatever you've got on hand)
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 can = 348 ml = 1 1/2 cups cranberry sauce
1/2 cup milk
1/2 cup apple sauce ( = 111 g container) (original recipe called for 1/3 cup oil here)
1 egg
Directions
Heat oven to 400°F. Line muffin tin with paper baking cups.
In a large bowl, combine flours, sugar/brown sugar(s), baking powder, baking soda and salt; mix well. In medium bowl, combine cranberry sauce, milk, apple sauce and egg; blend well. Fold into dry ingredients all at once; stir until dry ingredients are moistened.
Fill muffin cups about three-quarters full.
Bake 20 to 22 minutes or until golden brown.
Makes 15 standard sized muffins.
