Ingredients

3/4 c. (1.5 sticks) butter, softened
1c. packed brown sugar
1 egg
1 tbsp. apple juice
1/2 tsp. vanilla extract
1.5 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1.5 c. quick-cooking oats
10 oz. package Hershey cinnamon chips
1 c. chopped, peeled apple
Directions
preheat oven to 350
beat butter, brown sugar, egg, apple juice and vanilla in large bowl on low to medium speed until creamy.
stir together flour, baking powder, baking soda and salt. add to butter mixture and beat well.
stir in oats, then add cinnamon chips and apple. stir until combined.
drop by teaspoons two inches apart onto ungreased cookie sheets.
bake about 10 minutes or until edges are lightly browned. cool one minute. remove from cookie sheet to wire racks. cool completely.
makes about 3 dozen
