Ingredients

    Olive Oil, 1 1tsp
    Onions, raw, 0.25 cup, chopped
    1 chopped Italian tomato
    Unisoya tofu, 227 grams (1/2 pkg)
    Curry Paste Hot Patak’s 140cal=2Tbsp/30g/serv, 1 tbsp
    Potato, raw, 1 small (1-3/4" to 2-1/2" dia.)
    Peas, frozen, .25 cup
    Spinach, fresh, 1.5 cup

Directions

Basically a stir-fry. Cook tofu and onions first, add curry paste and simmer 10 minutes. Potatoes are boiled beforehand or during initial stir fry. Add rest of ingredients and simmer another 10 minutes. Serve with rice or naan or chapatis (none of these included in calorie count)
