Ingredients

    1/2 cup raisins
    3/4 cup crushed pineapple, drained but not dry
    1 cup brown sugar
    1/2 cup margarine
    1 egg, unbeaten
    1 tsp vanilla
    2 cups all purpose flour
    1 tsp baksing powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup chopped walnuts

Directions

Drain excess juice off pineapple. Mix raisins and pineapple; set aside. Combine sugar, butter, egg and vanilla in a mixing bowl; beat until fluffy. Stir in raisins and pineapple. Sift flour with baking powder, baking soda and salt. Add to wet ingredients and mix well. Sitr in nuts. Spoon into greased or paper lined muffing tin, filling 1/2 to 2/3 full. Bake at 375 degrees for 20 minutes or until done.

Muffins are better the second day after making. The flavors come together much better.

    Very Good
    Im not convinced on these I will wait and have a taste tomorrow as you suggested but my husband seems to like them. I will probably make them again.
