Ingredients

2 eggs
1 pat of butter
1 oz regular cream cheese
1 tbsp of your favorite sugar free jelly
Directions
1. Heat pan on medium heat and melt butter.
2. Scramble the eggs and add a pinch of salt.
3. pour into pan and let set up then push the outer edge in a bit and roll pan so liquid egg fills up the empty spot. I usually do this on two sides. It helps make sure the egg cooks thoroughly.
4. I usually cut an oz of cream cheese and then cut that in half and line them up down the middle of the egg circle.
5. Using a spatula, lift one side up and over the cream cheese, then flip that over so that it is folded up. I usually let it cook for a short time on one side and then flip it over and cook for another 30 seconds on the other side.
6. Remove from heat and add the jelly and eat.
This makes a pretty big crepe and I usually can only eat half, but I've had bariatric surgery (gastric sleeve)
