Introduction

Good way of using up your mash potatoes left overs. However you could substitute fresh potatoes instead of mashed potatoes. Good way of using up your mash potatoes left overs. However you could substitute fresh potatoes instead of mashed potatoes.

Ingredients

    1 lb Ground Turkey Sausage (Mild)
    1 large onion
    2 tsp salt
    1/2 tsp pepper
    1 tsp dried basil
    6 cups fat free chicken broth
    1 15-oz can whole corn, drained
    4 cups left over mashed potatoes or substitute 3 large potatoes, peeled and cubed.

Directions

Brown sausage with chopped onion, drain off fat.
In a large soup pot, add chicken broth, salt, pepper, basil and mashed potatoes or cubed potatoes. If using cubed potatoes, cook until the potatoes are tender.
Add sausage and onion.
Simmer for 15 minutes over medium heat. Add corn, stir and heat through.
