Number of Servings: 18

Ingredients

    4 eggs
    188g sucanat
    240g whole wheat flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 cup 2% milk
    1 T. butter
    1 tsp. vanilla

Directions

In a mixing bowl, beat eggs on medium speed for 3 minutes. Gradually add the sucanat, beating until thick. Combine flour, baking powder and salt; beat into the egg mixture. Heat milk and butter just until butter begins to melt. Beat into batter with vanilla on low speed. Pour into a greased 9"x13" baking pan. Bake at 350 for about 25 minutes or until cake tests done. Cool. Cut into 18 pieces. To serve, split piece of cake in half. Top with sweetened strawberries (or other berries) and whipped cream.

    Very Good
    I halved the recipe and used brown sugar as I don't have sucanate. It's a little lower and denser than regular short cake but with the whole wheat flour that's no surprise, and well worth it. - 6/12/11
