Ingredients

    8 oz Lean boneless pork loin chop, 28oz can Del Monte diced tomatoes, 15 oz can Red kidney beans, 1 medium white onion, 1 green bell pepper, 1 jalapeno, Spices to taste (no sugar added)

Directions

Chop pork loin into small chunks, chop jalapeno, green pepper and onion into small chunks.

Saute the above ingredients using a non fat cooking spray.

Drain kidney beans, add kidney beans and tomatoes w/ juice to the saute mix.

Add spices to taste (I like to use cumin, ancho chili powder, red pepper flakes, black pepper and salt)

Simmer for 10 minutes.

Makes 6 1 cup servings
