Introduction

Enjoy your pancakes with a small amount of pure maple syrup, hold the butter, and this is simply delicious and filling! Can be eaten plain to make a great nutritional snack food too! Just refrigerate leftovers, pop in the microwave when needed, and um, um, good! I modified this recipe from EN (www.environmentalnutrition.com) and used whole wheat flour, omitted the salt, and used Splenda as a substitute for 3 tbsp. sugar. This recipe will boost your health with flaxseed's health-promoting omega-3 fatty acids, phytoestrogens, fiber and protein. Enjoy! Ingredients

    1 1/4 cups whole wheat flour
    1/3 cup coarsely ground flaxseed
    1/8 cup SPLENDA� Sugar Blend
    1 tablespoon baking powder
    1/2 teaspoon salt (optional)
    1/4 teaspoon cinnamon
    Dash of nutmeg
    2 eggs, separated
    1 1/4 cups skim (nonfat) milk
    1 tablespoon canola oil
    1 cup pared and shredded apple (shred just prior to adding to batter)

Directions

1. In large bowl, combine flour, ground flaxseed, sugar, baking powder, salt, cinnamon, and nutmeg.
2. In medium bowl, lightly beat together egg yolks, milk, and oil.
3. In a separate bowl, beat egg whites until stiff peaks form.
4. Add egg yolk mixture to the dry mixture and stir until just combined.
5. Shred apple and add to batter.
6. Fold in egg whites.
7. Preheat griddle; spray with nonstick cooking spray.
8. Pour 1/3 cup batter for each pancake and cook until bubbles appear, about one minute. Turn and brown.
Makes 12 pancakes, two per serving.
