Introduction

Ingredients

2 Chicken Breasts
2 OZ Monterey Cheese, Monteray Jack for more kick.
4 Slices Deli Ham
1/4 C Whole Wheat Flower
1/4 C Egg Substitute
1/3 C Whole Wheat Bread Crumbs
1 TBS Light Margarine
2 TSP Garlic Powder
(Also need tooth picks or string!)
Directions
Butterfly each piece of chicken. If you start at the thickest end, it is much easier.
Place 1 OZ of cheese and 2 slices of ham inside of each breast.
Use a toothpick or string to secure chicken.
Pat chicken with flour, and then dip into egg substitute.
Coat chicken in bread crumbs.
Bake at 350 for about 15 minutes.
While chicken is baking, melt margarine in microwave, then stir in garlic powder.
Pull out chicken, and baste with garlic butter.
Put chicken back in oven and bake for 10-15 more minutes (maybe more) depending on your oven!
This makes 4 servings, half of a breast each.
