Ingredients

    2 1/4 cups vital wheat gluten
    1/2 cup nutritional yeast flakes
    1/4 cup chickpea flour
    2 tbsp onion powder
    1 tbsp fennel seed
    2 tsp coarsely ground pepper, preferably freshly ground
    2 tsp ground paprika
    1 tsp red pepper flakes
    1/4 tsp cayenne pepper
    1 tsp ground smoked paprika
    1/2 tsp dried oregano
    1 tsp salt
    1/8 tsp ground allspice
    2 1/4 cups water
    8 cloves garlic, minced
    2 tbsp olive oil
    2 tbsp soy sauce

Directions

First, toast the fennel seed in a dry skillet.

Next, combine the dry ingredients, included the freshly-toasted fennel. Combine wet ingredients and garlic. Mix dry and wet together with a fork. When combined, take a 1 Tbsp scoop of the dough, place it in a small square of tin foil, and roll into a sausage link shape inside the tin foil, wrapping the ends tootsie-roll style. Complete for the entire dough batch. We got about 40 sausage links. Then, take a two tier bamboo steamer and get it going in some boiling water in a wok, layer the aluminum foil sausage packets in the steamer, and steam for 15 minutes. Swap the steamer tiers and steam for 15 minutes more. Once done, unroll the sausages and let cool, then store.

1 serving is 1 sausage. 1 sausage is ~1 Tbsp of dough. Each sausage is 40 calories, 0.1 g of fat, and 5.8 g of protein. Bon appetit!
