Ingredients

    Dough:
    4 tbsp. of crisco
3 1/2 cups of all purpose flour
    pinch of salt
    pinch of sugar

In large mixing bowl combine all ingredients and with hands blend crisco and flour til consistency of cornmeal, then once all mixed pour small amounts of cold water til forms ball and is workable and not sticking to your hands, (key is to add small amount of water at a time) probably no more than 1/4 cup of water if that

Peel apples and cut in slices (about 7-8 medium size apples) and place in bowl of cold water so they won't turn brown

once all peeled drain most of water, add 1/3 cup of cinnamon, and 1/2 cup sugar to apples, and mix well.

Break dough into 2 balls, and lightly flour pastry sheet, roll out dough, place in 9 inch pie shell, then add apples, then roll out second ball of dough and place on top of apples, then join both pie shells together to seal as you please.

With knife, make small slits in top of pie dough for it to vent as it cooks. Lightly butter and sprinkle cinnamon and sugar on top of pie and place in oven, preheated at 350, then bake for 40-55 minutes.
