Introduction

This is a great winter stew - very comforting, very filling, like your grandmother would make it. This is a great winter stew - very comforting, very filling, like your grandmother would make it.

Ingredients

    1 lb package dry pinto beans
    2 medium onions, roughtly chopped
    2 large carrots, thickly sliced
    3 slices deli meat ham, chopped
    1 bay leaf
    1 tbsp dried parsley
    1/2 tbsp dried thyme
    salt and pepper, to taste

Directions

Presoak the beans according to the package directions or just soak them overnight in about 10 cups of water. Drain and rinse. Add 6 cups of fresh water (may substitute chicken stock or add a bouillon cube) to the beans and bring to a simmer. Add the onions, carrots, ham, and spices. Simmer on medium-low heat for 1.5 - 2 hrs until tender.

    Incredible!
    I've been making this stoup (stew/soup) for years, with one exception. I add a can of low sodium crushed tomatoes because I just love tomatoes.

    Even without the tomatoes it's pretty great stoup!
