Introduction

If you like buffalo wings you will love these little appetizers. At only 26 calories each.you can eat almost as much as you want guilt free!! Serve some lite blue cheese on the side and you have a true Buffalo treat!! Did I mention it's low carb and low fat??? If you like buffalo wings you will love these little appetizers. Ingredients

    8 oz of cooked white chicken, diced, shredded small. (I used the white meat of a chicken rotisserie from the grocery store)

    1 stalk of celery diced small, almost minced
    1/2 cup of hot sauce
    1 oz of Fat Free cream cheese
    2 pkgs. - of Athens Mini Filo Shells
    Fat Free Cheddar Cheese

    Light Blue Cheese optional)

Directions

Preheat oven to 350 degrees per the instruction of the Filio Cups.

Mixture:
Cut your chicken into tiny pieces almost ground chicken looking. In a mini food processor dice up your celery until it's tiny, like minced garlic. In a medium bowl add chicken celery, cream cheese and hot sauce. Mix together until well blended.

Place mixture in Filio Cups and top with a little cheddar cheese and bake for 5 to 8 minutes.

Serve with Light Blue Cheese or Ranch Dressing on the side. Oh and the calories maybe less, since I had plenty mixture left over! Perfect for taco's or a wrap!

    This was excellent and so easy to make! I used the leftover mixture to make buffalo chicken salad sandwiches grilled on the stove top. Also excellent! - 12/30/12
