This is a delicious recipe for poached eggs and vegetables. We call them festive because the colors in it are muted except the Red tomatoes and Green Spinach. Fun and delicious Year round! Ingredients

10 oz Frozen Spinach
3 Cloves Garlic\
1/2 Cup Chopped Onions (White)
1 Tomato Chopped (Med)
2 Cups Sliced Crimini Mushrooms
4 Large Eggs
1 tsp Light Cider Vinegar
1 Tbsp Vegetable Broth
OPTIONAL: Salt and Pepper to taste
Directions
Directions:
1. Chop onions and garlic and let sit for 5 minutes.
2. Bring water to a high simmer in a 10-inch skillet with 1 tsp of vinegar.
3. In a separate skillet heat 1 TBS broth.
4. Sauté onion and mushrooms in broth for 3 minutes over medium heat stirring frequently.
5. Add tomato, garlic, spinach (and salt/papper if you opt) and sauté for another 2 minutes.
6. When water comes to a high simmer poach eggs for about 5 minutes, or until whites are firm. Remove from water with a slotted spoon and place over spinach mixture.
Makes 4-8oz Servings
