Ingredients

    4 poached eggs
    4 slices of whole wheat bread, toasted
    1.5 cups cooked spinach, squeeze out all the water
    2-3 cloves of garlic
    1 Tbsp olive oil
    Salt to taste
    Cayenne pepper to dust eggs (optional)

Directions

Saute the spinach and garlic in the olive oil for 3-4 minutes. Divide in four parts and place on top of each piece of toast. Top with the poached eggs, sprinkle with salt and cayenne pepper, if desired, and enjoy.
Makes four servings, on piece of toast each.
