Introduction

These are my rendition of an egg dish we were served in a Mexican B&B These are my rendition of an egg dish we were served in a Mexican B&B
Number of Servings: 1

Ingredients

    1/4 cup diced ham ( or turkey)
    1 T of salsa or hot sauce
    1 medium egg
    a sprinkle of cheddar cheese

Directions

Heat oven to 400 degrees. Spray a ramekin or small oven proof cup with Pam. Sprinkle ham bits on bottom. Add 1 T of your favorite salsa or hot sauce. Carefully break an egg over the ham and salsa and bake 11-13 min or until egg white is almost set. Sprinkle with cheddar cheese and bake 2 more minutes or until melted.
