Ingredients

    12 oz. lean ground beef
    1 medium onion
    1 cup carrots
    1 can green beans
    1 can corn
    1 can black-eyed peas
    1 celery stalk
    1-2 red potatoes
    Salt and pepper to taste

Directions

1. Pour green beans with juice, corn with juice, blackeyed peas, and tomato sauce into large pot and cook on medium-high until you are ready to add the meat balls.
2. Cut up 1 onion into small chunks or pieces, cut up the potatoes (2 red potatoes), cut up the celery and carrotts then add to soup.
3. Roll hamburger into small balls (measure into 1-oz servings so you will know how many you can have per cup of soup)
4. Add meatballs to soup and turn down the heat, cover. Make sure to watch the soup and stir it often. I let it cook for about 30 minutes.
