Ingredients

4 tbsp olive oil
1 12 oz. package frozen broccoli
1 12 oz package turkey bacon
3 tsp minced garlic
2 14.5 oz cans petite diced tomatoes
1 tbsp dried basil (according to taste)
3 1/2 cups water
Salt and pepper to taste
Directions
Chop the bacon into small pieces. In a dutch oven or small stock pot, saute the garlic, bacon, and broccoli in the olive oil for about 5 minutes. Add the tomatoes and basil. Add the water by filling each can from the tomatoes with water and adding it to the pot. Stir well. Cover the pot and let it come a simmer. Simmer for 30 minutes over medium heat. Remove from heat and blend the soup with an immersion blender or transfer to a standing blender to puree. Add pepper to taste. This soup can be served hot or cold. Makes 6 servings of approximately 1 1/2 cups each.
Note: You can cut down on the sodium count by using a low sodium version of the canned tomatoes. You probably won't notice a significant difference since the bacon will add enough saltyness and flavor.
