Ingredients

    Bowl #1:
    Granulated Sugar, 1.5 cups
    Crisco Butter Shortening, .5 cup
    Trader Joe's Organic Pumpkin, 1 cup
    Egg, fresh, 1 large
    Vanilla Extract, 1 tsp

    Bowl #2:
    Nutmeg, ground, .5 tsp
    Cinnamon, ground, 1 tsp
    Pumpkin Pie spice, 1 tsp
    Salt, 2 dashes
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Flour, white, 2.5 cups

    Ghirardelli Chocolate Chips 60% Cacao Bittersweet Chocolate, 1.5 cups

Directions

1. Preheat oven to 350 degrees.

2. Grease or spray cookie sheets.

3. Blend together sugar, shortening, pumpkin, egg and vanilla extract.

4. In a separate bowl, sift together flour, baking soda, baking powder, salt, pumpkin pie spice, cinnamon and nutmeg.

5. Slowly pour the flour mixture into the wet pumpkin mixture and continue to blend until texture is soft and fluffy.

6. Add and stir in the dark chocolate chips.

6. Use a tablespoon to make about 1.5 inch cookies. Flatten the tops a little bit.

7. Bake for about 15 minutes. Yields about 40 cookies.
