Introduction

Low, low fat Potato Soup, who would of thought? I saw a bunch of recipes online, and kind of made it my own especially for calculating purposes. Low, low fat Potato Soup, who would of thought? I saw a bunch of recipes online, and kind of made it my own especially for calculating purposes.
Number of Servings: 7

Ingredients

    3 medium carrots - diced
    3 Medium Celery Stalks - diced
    1/4 cup of onion - Diced
    4 Medium Rustic Potatoes - Diced
    4 Cups of low sodium chicken broth
    dill
    parsley
    pepper

Directions

Add all your ingreidents in the crockpot, EXCEPT the Evaporated Milk.

Cook on high for 4 hours or low 6-8 hours

1 hour before soup is done, pour in your evaporated milk.. Cook for one more hour.

If you like your soup more blended use a mash potato masher or a hand blender.

Optional:
Top with some bacon bits, fat free cheddar and a dollop of greek yogurt
