Introduction
Mother was given this recipe by my sister Jeanne long ago. Mother always cooked this cake at Christmas and now we girls cook it for Christmas too! Ingredients

1 cup vegetable oil
2 cups sugar
3 eggs
3 cups flour
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp. salt
2 cups whole fresh cranberries
2 cups peeled & chopped apples
1 cup chopped pecans
1 tsp. vanilla extract
Contectioner's sugar
Directions
Beat oil, sugar, and eggs with electric mixer until smooth. Mix dry ingredients together and add to oil mixture, stirring by hand - dough will be stiff. Add cranberries, apples, pecans and vanilla, stirring well. Bake in greased and floured Bundt pan in preheated 325 oven for 60 minutes - then in 350 degree over for 15-20 minutes. Remove from oven and cool in pan for 15 minutes. Turn out and dust with confectioner's sugar.
