Ingredients

    4 strips bacon, cooked and drained
    7 cups chicken broth
    2 carrots, sliced
    1 white potato, diced
    2 stalks celery, sliced
    1 tbsp chopped fresh parsley
    3 cups white beans, cooked
    1 cup kale, sliced

Directions

Cook bacon in Dutch Oven. When browned, removed from pot and drain pot (do not clean). Set aside bacon. Add 7 cups chicken broth to pot, picking up bits from bottom of pot. Add carrots, potato, celery, parsley. Bring to simmer. When carrots are soft, (about 10 minutes), using an emmersion blender to mix soup partially. Add beans. Blend again. Soup should still be chunky. Add kale and bacon. Stir. Should be on soft boil for about 5 minutes to cook kale
