Ingredients

    1 bulb fennel - shredded
    3 cups red cabbage shredded
    1 medium apple - shredded
    1/2 c. chopped walnuts
    2 T candied orange peel or low sugar orange marmalade (there's a bit more sugar in the orange marmalade)
    4 T cider or raspberry vinegar
    1 T Walnut or Flax seed oil

Directions

Shred fennel bulb, apple and red cabbage in food processor and remove to large mixing bowl.
Add nuts, orange peel, vinegar, oil - mix well.
Done!
It's good to eat right away, but even better if you let the flavors mingle for about a day.
If you prefer a bit sweeter - add sweetener of your choosing and/or some dried cranberries or raisins.
If you like a little "kick" add a dash of chipotle pepper.
