Ingredients

    1 lb dry pasta (fussili or bow-tie works well)
    2 Tbsp olive oil
    1 1/2 tsp minced garlic
    1/2 cup raisins
    1/4 cup pine nuts
    12 oz bag of baby spinach leaves


Directions

Boil a large pot of lightly salted water for the pasta. Put the pasta in to cook and time it according to the package directions, stirring occasionally. Once done, drain the pasta.

While the pasta is cooking, heat a large skillet or pan and then add the olive oil.
Turn the heat down to low and once the oil is hot, quickly add the raisins and garlic, stirring so they don't burn.
After the garlic is just starting to brown, add the spinach in batches, stirring to make room as it wilts.
Once all the spinach is wilted and tender, but still bright green, stir it into the drained, cooked pasta.
Mix the spinach and pasta so the spinach and raisins are evenly spread out. Sprinkle the pine nuts over top, add salt and pepper to taste, and mix again. Serve with Parmesan cheese on top (cheese is optional so isn't included in the nutritional information for the recipe).
