Ingredients

    1 pound boneless, skinless chicken
    1 packet dry ranch seasoning packet
    1/4 cup breadcrumbs
    2 tbsp olive oil
    Splash of white wine

Directions

Combine ranch packet and breadcrumbs in a medium bowl. In separate bowl whisk egg. Rinse and pat dry the chicken breasts. In frying pan heat oil over medium high heat. Dip chicken into egg, coating both sides then put into the ranch mix and coat both sides. Place in frying pan and cook 3-5 minutes per side or until browned. Place in baking dish and cover with foil. Bake 45 min to an hour. Remove foil and splash a little white wine into dish and scrape the bottom of the dish (deglaze). This makes a sauce for the chicken. Cover and let sit for 10 minutes. Enjoy!

    Do you use a whole egg or just the whites.
    my guess on the wine sauce would be that low sodium chicken
    broth would be just as good

    I used the whole egg but you can use just the whites. The egg helps the ranch mix stick to the chicken. You can probably skip the egg and still be fine. Yes, chicken broth would work. I just love wine!

    Totally. I just wanted to deglaze the pan and make a little "gravy". It will still be moist without it.
