Ingredients

- 3 pounds chicken tenders or boneless skinless breast cut into 1 1/2-inch strips
- 2 cups low fat buttermilk
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 tablespoon granulated garlic
- 3/8 teaspoon salt
- 1 teaspoon pepper
- 3/8 teaspoon red pepper flakes
- 1 1/2 cup smoked almonds
- 12 large sourdough hard pretzels
Directions
In a small bowl, combine basil, oregano, granulated garlic, salt, pepper and red pepper flakes. Place buttermilk and spice mix into a double-lined resealable plastic bag. Add chicken and massage bag until well coated. Refrigerate 6 to 12 hours.
Preheat oven to 350 degrees.
Make a "breadcrumb" mixture of the almonds and pretzels by adding them in batches to a food processor and process until fine. Dump in a bowl and liberally coat each of the chicken tenders, making sure to press the coating onto them well.
Put on a rack on a baking sheet and put in oven for approximately 20 minutes or until fully cookied, rotating half way through.
Makes approx 4 servings.
