Introduction

Ground turkey with fresh vegtables, mix it up, use what you like. It's great!! Ingredients

    Barley, pearled, raw, 1 cup
    *Jennie-O Extra Lean Ground Turkey, 20 oz
    *Wolfgang Puck Organic Beef Flavored Broth, 8 cup (*medium red onion, chopped, .5 cup
    Baby Carrots, raw, 1 large
    *White Corn, Frozen, 2 cup
    Peas, frozen, 1 cup
    Mushrooms, fresh, 2 cup, pieces or slices
    Mushrooms, fresh, 2 cup, whole
    *Canola Oil, 1 1tsp
    Celery, raw, 2 cup, strips


Directions

In a saucepan, put 2c of cold water in with 1c of pearled barley on medium heat to boil until the water is gone.

Heat 1tsp of Canola oil in a big soup pot. Throw in your chopped onions, carrots and celery. Saute for about 5 minutes. Add your turkey and season with salt, pepper to taste, as well as the onion powder & garlic powder. Sauteed until mostly cooked. Add your beef broth and bring to a boil, then drop to a simmer. Let this simmer for approx 20 minutes, then add the chopped mushrooms, corn and peas & any other veggies you want. let that simmer for another 10 minutes, then add the barely. Simmer that for another 10 minutes or so, then it's ready to go!

This is easily frozen in smaller servings. When reheating, either add more beef broth or water as the barley will soak up the liquid.
