A fabulous dinner in under 20 minutes! A fabulous dinner in under 20 minutes!
Number of Servings: 8

Ingredients

    4 boneless, skinless chicken breast halves
    1 tsp ground cumin
    1/4 tsp cinnamon
    1/4 tsp salt
    1 tbsp oil
    1 large onion
    2 cloves garlic
    1-8oz can stewed tomatoes
    1/3 c raisins
    1/4 c hot salsa
    8 6"-7" corn tortillas
    1-2 cups Monterey or cheddar cheese

Directions

Cube chicken.
Sprinkle with spices.
Saute' with onion and garlic until no longer pink.
Add tomatoes, raisins and salsa.
Reduce heat and simmer until cooked through (about 8 min).
Spoon into tortillas and sprinkle with cheese.
Serve with cucumber and jicama sticks.
