Introduction

This is nothing fancy, just your basic, after Easter or anytime, egg salad. This is nothing fancy, just your basic, after Easter or anytime, egg salad.

Ingredients

    12 hard boiled eggs
    1/2 C reduced-fat mayo
    1/4 C yellow mustard
    salt to taste

Directions

Peel eggs and mash with pastry blender. Add other ingredients and stir. Serve on whole grain bread or on a bed of lettuce.

    Incredible!
    Almost exactly the way I make my Egg Salad, only I usually make it on a smaller scale (there’s only 2 of us, so making a large batch would be a bit of a waste). I like to toast the bread to have a Toasted Egg Salad Sandwich, which is a nice way to switch it up.

    Yeah...delicious...but come on...why is this on a website to get healthy?? is all that cholesterol and sodium really health concious. Sorry, I am just tired of looking at recipes that aren't healthy....I imagine it is good...my complaint is it isn't healthy. And isn't that what this site is for? - 1/7/11

    Not every recipe on sparkpeople is written here because it's healthy, though most of mine are. Some of them are on here so that we can determine the exact number of calories we eat when we splurge on something like this. Why did you bother to make it and rate it if you thought it was so horrible?
