Ingredients

    Simply Egg Whites, 100% Pure Liquid Egg Whites, Naturegg Brand, 250 gram(s)
    Salt, 1 dash
    Pepper, black, 1 dash
    Sliced, roasted chicken breast, fat-free, 50 grams
    Cheddar or Colby Cheese, Low Fat, 0.25 cup, shredded
    Green Onions, 2 tbsp chopped

Directions

Spray 9" non-stick skillet generously with cooking spray; heat over medium-heat. Pour in liquid egg whites; sprinkle with salt and pepper. Cook and stir for 30 sec. Let cook for 1-2 min or until eggs are almost set and bottom is browned.
Sprinkle centre of omelette evenly with chicken, cheese and green onion. Reduce heat to medium; cover and cook 1-2 min or until set. Fold two sides of omelette over filling. Cut in half and slide onto two serving plates. Serves 2.
For convenience cook a small chicken breast in microwave oven 2-3 minutes or until no longer pink inside.
Fabulous with salsa on the side!
