Ingredients

24 raw shrimp
1 cup Low Sodium Vegetable Broth
1 Serrano Pepper
1 Roma Tomato,
1 Small Onion,
2 Stalks of Cilantro,
1 T Chopped Cillantro,
1/2 cup Catsup,
1/4 cup Diced Cucumber
1 Lime Wedge
Directions
Poach raw shrimp in Vegetable Broth with
1/2 Serrano Pepper,
1/2 Roma Tomato,
1/2 Onion,
2 Stalks of Cilantro,
until the shrimp are pink but very tender. Discard vegetables, reserve liquid and chill shrimp.
Mix catsup with the reserved liquid and a squeeze of lime juice.
Chop and mix the other half of the onion and tomato with the cucumber. Divide between 4 glasses. Chop and mix the other half of the serrano chili with chopped cilantro. Divide between the same 4 glasses.
Put 6 shrimp in each glass. Pour catsup sauce over the shrimp.
Garnish with a lime wedge.
