Number of Servings: 70

Ingredients

    6 TBSP butter
    2 TBSP applesauce, unsweetened
1 cup brown sugar (I did just under a cup on both sugars)
    1 cup white sugar
    1 cup crushed pineapple, drained
    1 teaspoon vanilla
    2 eggs
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    4 cups all-purpose flour
    2 teaspoons baking powder

Directions

#1Cream shortening and the sugars.
#2 Add egg and pineapple.
#3 Stir in vanilla.
#4 Sift flour, then measure it.
#5 To the flour, add salt, soda, and baking powder.
#6 Add dry mixture to the wet mixture.
#7 Drop by rounded tsps.
#8 onto a lightly greased baking sheet.
#9 Bake 10-12 minutes at 350°F,or until done.

Recipe says it makes 4 dozen, I got more though. Depends on the size.

    Good
I love the cookies, but I wish that they actually tasted more like pineapples than snickerdoodles. - 4/24/12
