easy to make... warming on a cold day! easy to make... warming on a cold day!
Number of Servings: 4


    2-4 pounds chicken parts (skinned)
    flour for dredging
    1/4 c olive oil
    1 clove minced garlic
    1 med choppe onion
    1 lge green pepper, chopped
    1 C sliced mushrooms
    1 28 oz can chopped tomatoes
    1/4 C water
    2 T white wine
    2 T salt
    1/4 tsp oregano
    1 tsp basil
    1/2 tsp thyme


1. In skillet add olive oil, Saute' onion, garlic & peppers (10 minutes). Add mushrooms 5 minutes in. and remove from skillet.

2.Add Dredged chicken to skillet & brown.

3. Return sauted' veggies anf all other ingredients to skillet and simmer for 30-49 minutes.

serve over cooked noodles ( noodle not included in nutritional calculations)

  • Cooked mine in a enamel on cast Iron pot. Use a heaping tbl spoon of jared crushed garlic, red bell peppers because thats what I had 2 28 oz cans of hole tomatoes that I crushed by hand, a large onion, a hole 8 to 10 oz of dry red wine and cut the
    water. One of the best chicken recipes I've made..
