Ingredients

1 lb. boneless, skinless chicken breasts
8-oz. (dry weight) whole wheat pasta
4 roma tomatoes, diced
1/2 small onion, chopped
5 fresh basil leaves, julienned
3 cloves garlic, chopped
1 T extra virgin olive oil
1 tsp honey
salt and pepper to taste
red pepper flakes (optional)
1/4 C balsamic glaze, divided (recipe and instructions below)
Directions
1. In a sauce pan, heat 1 cup balsamic vinegar. Bring to a boil, then reduce the heat and simmer for 25-30 minutes. This will produce a balsamic glaze.
2. cook pasta according to package directions.
3. Heat a pan over medium-high heat. While heating, cut chicken breasts into four pieces. Lightly season with salt and pepper. Spray the pan with cooking spray, and grill the chicken on both sides.
4. In another pan, heat olive oil over medium high heat. Add chopped garlic and onion. Let the garlic cook for a couple minutes, until fragrant. Add the tomatoes, and saute. Season with salt, pepper, honey, and crushed red pepper flakes (optional).
5. Add the cooked and drained pasta to the tomato mixture, and stir. Add starchy pasta water if needed. Mix in the julienned basil, and let this cook for a minute or two.
6. Slice the chicken breasts and plate on top of the pasta.
7. Drizzle with up to 1 tbsp. of balsamic glaze per dish. Sprinkle with parmesan cheese, if desired (not added in nutritional information).
