Introduction

A colorful mix of red & sweet potatoes. A colorful mix of red & sweet potatoes.

Ingredients

    3-1/2 cup sweet potato, cubed (skin removed)
    3-1/2 cup potato, raw, cubed (red are great keep skin on)
    1/2 tsp salt
    1/2 tsp garlic powder
    1 tsp basil
    1/2 tsp dried rosemary,
    1/2 tsp black pepper

Directions

Preheat oven to 350*F.
Mix all ingredients together in a large bowl.
Make sure all potatoes are well coated in oil.
Spread potatoes on cookie sheet in one layer.
Cook until potatoes are cooked through (about 30 minutes).
For crispier potatoes broil for a minute or two until well browned.
14 servings of 1/2 cup.

    My family loves this with red potatoes - I can't wait to try adding sweet potatoes. I do make mine with more herbs including a little cayenne and thyme and even some grated parmesan cheese for a little added crunch. - 8/19/09

    BEWARE the oil isn't listed in the ingredients and it is not figured into the nutrition calculation!!! The calories will be higher. - 7/8/12

    Awesome! I went pretty heavy on the herbs and it encrusted the potatoes nicely. I ground the rosemary with a motor and pestal to it was easy to eat. Will be making for a special family dinner! - 4/29/10
