Ingredients

    4 Boneless, Skinless Chicken Breasts
    2 C Sweet potato, raw, cubed (1" cubes)
    1 C Apple, cubed
    1 C Celery, chopped (not diced)
    1 Small Onion, raw (sliced or diced, your preference)
    1/2 C Dried Cranberries (craisins)
    1 C Light Cranberry Apple Juice
    1 tsp Rosemary
    1 tsp Thyme
    1 tsp Cinnamon
    1 tsp Pepper
    1 tsp Salt

Directions

Make 8 Servings

SPECIAL NOTE: DIVIDE THE SPICES - 1/2 goes in at the beginning; 1/2 goes in 30 -60 minutes before serving. If you won't have time before serving, you can put them all in at the beginning but it will be less flavorful.

Place fruit & vegetables in the bottom of the crockpot, cover with juice. Sprinkle 1/2 the cinnamon over fruit and vegetable mix.

Add chicken breasts, sprinkle 1/2 of each of the remaining spices over everything.

Cover and cook on high heat for 4-6 hours or low heat for 6-8 hours depending on your crockpot.

Turn the chicken over and add the other half of the spices about an hour before you plan to serve it.

** I tried it with half Orange Juice half Cranberry Juice and it was still delicious but the orange flavor stood out more than I expected.

    I'm cooking it now but I didn't have cran-apple. I had cranberry juice and orange juice so I'm doing half of each. It smells divine! I can't wait to taste it later. :-)

    This was very tasty! One note: I cooked on high for the minimum suggested time (4 hours) and the chicken was overcooked slightly. I will definitely cook on low next time. - 3/19/12
