Ingredients

    2 Tbs Olive Oil
    1/2 medium onion
    1 clove of garlic minced
    3 chicken breasts - cubed
    1 box of WW Penne Pasta (small noodles) - (cooked)
    2 cans Stewed Tomatoes (Basil, garlic & onion)
    2 cups Part Skim Mozzarella cheese
    2 Tblsp Italian Parsley (fresh)
    1/2 cup of Bread Crumbs
    1/2 cup of Parmesan cheese
    5 Tblsp Butter

Directions

Heat oil and cook chicken (approx 6 mins). add onion (saute) and add garlic. Remove from pan when cooked.
Cook pasta according to directions.
In large bowl add chicken mix and pasta.
Add stewed tomatoes, parsley and mozzarella. Mix well.
Pour mixture in a buttered baking dish.
Mix parm. cheese and bread crumbs together.
Put parm/bread crumb mixture over top of pasta mix
Put drops of butter on top

Bake for 30 minutes at 400 degrees
