Super low fat and yummy!! For convenience, you can 'bake' this in a crockpot. Put the batter into a loaf pan that fits into a 6-quart crockpot. Cook on high for 4 - 4 1/2 hours. Ingredients

1 1/2 c all-purpose flour
3/4 c sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 c egg substitute (I use Eggbeaters)
1 c mashed bananas
1/2 c unsweetened applesauce
Directions
Makes 8 good-sized pieces
Preheat crockpot on high. Spray a loaf pan (one that fits insided a 6-quart crock pot) with non-stick spray.
In a large bowl, stir together flour, suagr, baking powder, baking soda and cinnamon. In a separate bowl combine egg, bananas and applesauce. Stir wet ingredients into dry ingredients until just combined. Pour batter into loaf pan. Place loaf pan into crockpot. Cook on high for 4 to 4 1/2 hours. Check doneness with a toothpick inserted into the center, if it comes out clean, loaf is done. Allow to cool before slicing.
